Ingredients for 12 muffins

  • 200 g zucchini, grated
  • 150 g date:SUGAR
  • 200 g spelt flour (plain)
  • 50 g almond:PROTEIN PORRIDGE
  • 1 pack of cream of tartar powder
  • 1 teaspoon cinnamon
  • 50 g almond butter
  • 300 ml of water
  • 40 g pecans

Here's how it's done:

  1. Mix all dry ingredients in a bowl
  2. Add the nut butter and water and mix the dough into a smooth mass.
  3. Finally, fold in the grated zucchini and chopped pecans.
  4. Divide the dough into 12 muffin tins, press a few pecans into the dough and bake at 180 degrees (top and bottom heat) for about 25-30 minutes.
