This mint soup is ideal for balancing all constitutional types. The fresh aromas of mint have an invigorating effect on the Lung type (wind), cooling and calming for Tripa (fire) and support digestion for the Beken (earth). Overall, the soup offers a balanced meal option that refreshes the body and mind.

Ingredients

  • 1 liter of vegetable broth
  • 1 onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 2 potatoes, peeled and diced
  • 1 cup peas (fresh or frozen)
  • 1 small teaspoon green mint powder
  • 1 cup cream or plant-based cream alternative
  • salt and pepper to taste
  • 2 tablespoons olive oil or butter
  • Optional: croutons or toasted bread to serve

Here's how it's done:

  1. Heat oil or butter in a pan. Sauté onions and garlic until soft.

  2. Add diced potatoes and fry briefly.
  3. Pour in vegetable stock and cook until potatoes are soft.
  4. Add peas and cook until soft.
  5. Puree the soup until smooth.
  6. Add chopped mint or mint powder, season with salt and pepper.
  7. Add cream and heat the soup, but do not let it boil.
  8. Serve hot, garnished with mint leaves and optionally with croutons or toasted bread.

Tip: Our organic green mint is very intense, you only need very small amounts, it is best to test with a very small amount and increase the dosage according to taste.
